Oyster mushrooms are an edible mushroom that is considered one of the most popular and widely consumed fungi all around the world. Oyster mushrooms are classified as a wood-decay fungus in that they digest moist wood. WebMD says mushrooms are a good source of protein, fiber, potassium, vitamin B6 and folate.
To rehydrate before use, place the mushrooms in a bowl with hot to boiling water for at least 20 minutes (the bowl can also be covered to speed up the process). Squeeze water out the mushrooms before using.
