Oyster mushrooms are an edible mushroom that is considered one of the most popular and widely consumed fungi all around the world. Oyster mushrooms are classified as a wood-decay fungus in that they digest moist wood. WebMD says mushrooms are a good source of protein, fiber, potassium, vitamin B6 and folate. To rehydrate, before use, place the mushrooms in hot to boiling water for at least 20 minutes (the bowl can also be covered to speed up the process).
