Thai Red Rice has been grown in South central Asia for many centuries. It's good in rice salads and rice pilafs and goes well with steamed vegetables, grilled fish and light meats.
Directions: Rinse rice. Bring 2 1/2 cups lightly salted water or stock to boil. Add 1 cup rice and stir. Reduce to a simmer, cover, and leave to cook until tender, 30-40 minutes. Remove the lid and fluff the rice with a fork, then cover it again with the lid. Allow it to rest for 5 minutes. Fluff rice again and serve. Store leftovers in an airtight container once cooled.
