We are not talking about grocery store flour here. This is stone ground flour that has not been stripped of its vitamins and minerals, protein (11%-13% protein) and zinc, just so that it can live on a grocery store shelf for a lot longer. This is the way flour was sold many moons ago and still should be. It's ground in New England at Maine Grains where their goal is to re-localize grain production and milling.
