Translated to "crest of the rooster", this is some beautiful pasta, made from 100% semolina flour and slow dried, the old way. Pasta is dried in small batches on wooden racks for over 2 days the way it was done years ago on the hills in Italy. This process makes the slow dried pasta taste more like fresh pasta! Other companies mass produce and dry quickly on a high heat, this “cooks” the pasta and diminishes the quality. Boil 1# of pasta in 1 gallon of boiling water for 6-8 minutes, then drain. Should be slightly undercooked (al dente).

Ingredients: 100% semolina flour, salt, water.
