Nibs are cacao beans that have been fermented, roasted, winnowed (freeing lighter particles by throwing into the air), and lightly crushed. They are carefully slow roasted over low heat so that they are bursting with complex chocolaty flavors without any bitterness.
Some of our favorite ways to use nibs are as a delicious and healthy snack on their own, as an addition to sweet and savory foods such as mole sauces, salads, yogurt, oatmeal, granola, trail mix, smoothies, ice cream and baked goods. They can also substitute for nuts in many recipes as an allergy friendly option.

These cacao nibs are exclusively made from heirloom ‘Nacional’ varieties of cacao grown under the shade of native rainforest trees in coastal Ecuador. Like all cacao from heirloom 'Nacional' varieties, these nibs are smooth, flavorful, floral, and without the astringency or bitterness that characterize nibs from modern industrial hybrid cacao trees. These nibs are bought directly from small independent farmers using regenerative organic practices at stable prices.
