Brown Rice, Short Grain (ecofarm)
This brown rice is the short grain version. Brought to you by popular demand. It comes from California, an ecofarm, not certified organic but as close as it gets without being certified, and of course, naturally gluten free.
Short-grain brown rice is more dense and binds together well.
Use a 2:1 water to rice ratio. Rinse 1 cup rice well before combining with 2 cups water and a hefty pinch or half a teaspoon of salt in a saucepan. Bring to a boil, stir, reduce heat, and cover. Let simmer for 50 minutes without stirring! After 50 minutes or when water has been absorbed, remove from heat, let sit 5 minutes covered, then fluff with a fork and serve. For additional flavor, use broth instead of water and add a tablespoon or two of butter with the salt.
