Shiitake mushrooms have a fragrant aroma and are crisp, brittle, & lightweight. When rehydrated & cooked, the mushrooms develop a tender, meaty texture & have a savory, earthy, and smoky, umami flavor. Shiitake mushrooms are a good source of copper to maintain a healthy nervous system, vitamin B5, manganese, niacin, riboflavin They also provide vitamin D, calcium, phosphorus, potassium, & vitamin C. To rehydrate, before use, place the mushrooms in hot to boiling water for at least 20 minutes (the bowl can also be covered to speed up the process).
