Boston Cranberry Bean
by Baer's Best
$4.50
Colorful large kidney shaped bean, beige with red stripes. Originally sourced from Rob Johnston, founder of Johnny's Selected Seeds many years ago. According to him, it was called Andrew Kent, and was originally grown on the island of Vinalhaven in Maine. Looks like the Boston Beautiful bean pictured in the 1929 book Beans of New York. While it is beautiful, we call it cranberry to be more descriptive. This is likely the only producer of this rare heirloom bean.
Grown in ME.
These beans don't need to be pre-soaked. Pressure cook for 18 minutes or simmer on top of the stove for 2 1/2 to 3 hours. 1 cup of dried boston cranberry beans makes approximately 3 cups cooked.
