Give me some of that Tennessee Caviar, Y'all!

My beloved aunt in Birmingham, Alabama gave me her famous Tennessee Caviar recipe and I'm sharing it with you! Check it out with fresh summer ingredients and delicious black eyed peas. A southern tradition at Super Bowl parties & other games as well as a New Year's day meal!

Each version is a tad different but we all know my auntie's version is the best, right?

Tennessee Caviar

2lbs of cooked, drained & cooled black eyed peas

1 large green pepper, minced

2 cloves garlic, minced

Up to 5 jalapeño rings w/seeds

1/2 cup picante sauce

2 bay leaves

1/2 cup white vinegar

1 teaspoon salt

3/4 cup pimento stuffed green olives

3/4 cup Italian dressing

1 large onion minced

 

Mix all ingredients together & marinate overnight.

Check to see if it needs salt in the morning.

Serve with corn chips.
